Hominy Cheese Patties (Colombia)Adapted from Extending the Table. Makes 12. Grind 1½ cups canned posole (hominy) with ¼ cup liquid from the can until smooth in a food processor. Transfer to a mixing bowl. Add ¾ cup cornmeal, 1 cup grated cheese, 1 Tbsp. brown sugar, and ¼ tsp. salt. Mix well. Form into 12 small patties (about 2-3 inches across). Fry in non-stick pan, turning once after first side browns. | |

The original recipe calls for yellow cornmeal, but white cornmeal appears to work fine. (It was all I had.) Since the type of cheese was not specified, I chose to use aged white cheddar.
If you find that the patties don't hold together too well before cooking, work the dough a bit more with your hands so that the cheese melts slightly. Alternately, try adding an egg to the mixture.
