Hominy Cheese Patties (Colombia)
Adapted from Extending the Table.
Grind 1½ cups canned posole (hominy) with ¼ cup liquid from the can until smooth in a food processor. Transfer to a mixing bowl.
Add ¾ cup cornmeal, 1 cup grated cheese, 1 Tbsp. brown sugar, and ¼ tsp. salt. Mix well.
Form into 12 small patties (about 2-3 inches across). Fry in non-stick pan, turning once after first side browns.
