Adapted from Extending the Table. Serves 6-8. Soak overnight 1 lb. salt meat and 2 cups split peas. Drain and place in pot with 2 L water and 1 chopped onion. Bring to a boil and then simmer for 2-3 hours until peas are soft. Remove meat and cut into pieces. Return to the pot and add 1 cup diced celery, 1 cup diced potato, 1 cup diced carrot. Simmer 30 minutes until vegetables are tender. | |
