Fennel & Kiwi Salad

I made this up when our friends came over one night and made paella. It was a nice complement to the spicy dish.

  • 1 bulb fennel
  • 2 golden kiwi fruits (use regular kiwi fruits if golden kiwis are not available)
  • extra virgin olive oil
  • salt
  • freshly ground black pepper
  • 1 tbsp honey
  • 1 tsp. rice vinegar

Remove the stems from the fennel bulb and put them aside for some other purpose. Cut the fennel bulb in half, and then slice very thinly. Peel the kiwi fruits and slice into discs. Place the fruits and vegetables into a salad bowl. Add the honey and vinegar. Season with salt and pepper. Drizzle liberally with the olive oil. Toss and serve.
