Bacon Mac'n'cheese

  • about 400 g elbow macaroni
  • 3 slices of fatty bacon, diced
  • 2 tbsp. flour
  • 2 cups milk (I like to use skim milk.)
  • salt and pepper to taste
  • a dash of cinnamon
  • 2 cups shredded or diced sharp cheddar cheese
    (I like to substitute half with diced havarti cheese)
  • ½ cup bread crumbs
  • ½ cup gratedparmesan cheese

Preheat oven to 350 degrees.

Prepare macaroni by directions on box and drain well.

In a saucepan, brown the bacon over medium heat. Add flour and stir to remove lumps.

Pour in milk and cook until thickened.

Season with salt, pepper and cinnamon.

Add cheese and stir until melted.

Add macaroni and stir.

Pour mixture into 2 qt. casserole dish.

Sprinkle the top with the bread crumbs and the parmesan cheese.

Bake for 20 minutes.
