Chicken Adobo

Adapted from Extending the Table.

Serves 6.

Bring to a boil:

  • 3 lb. chicken, cut into serving pieces
  • ½ cup soy sauce
  • ²⁄³ cup vinegar
  • 1-2 cloves garlic, crushed
  • 2 bay leaves
  • 1 tsp. peppercorns

Simmer about 50 minutes until chicken is tender and sauce is reduced by half.

Add salt to taste. Serve hot with rice.
