According to Nigel Slater, this is easy. "Beef on the bone needs about fifteen minutes per pound at 425 degrees Farenheit. Couldn't be easier to remember. For a boned roast, aim for twenty minutes per pound." [Appetite, p. 133] Make sure the roast rests for at least 15 minutes, or up to half an hour.
